Polka Dot Meat Loaf
1 1/2 pound lean ground beef
1/2 cup ketchup
1/4 cup plain bread crumbs
2 tablespoons Worcestershire sauce
1/2 teaspoon salt
1 egg
6 sticks (1 oz. each) string cheese
1 teaspoon prepared yellow mustard
1 tablespoon packed brown sugar
Mix ground beef, 1/4 cup ketchup, bread crumbs, Worcestershire sauce, salt and egg. Press 1/3 of mixture in bottom of ungreased 8×4 inch loaf pan.
Make two rows of string cheese over meat mixture. Press into meat. Top with half of remaining beef mixture over cheese. Press ends and edges of beef mixture to seal in cheese, smooth top. Add two more rows of string cheese and top with remaining beef. Press edges well to seal in cheese. Bake 45 minutes. Meanwhile, in small bowl, mix remaining 1/4 cup ketchup, the mustard and brown sugar. Remove meat loaf from oven. Spoon juices from meat loaf, spoon ketchup mixture evenly over top. Return to oven, bake 30 to 45 minutes longer. Let stand 15 minutes before cutting into slices. 6 servings
Broccoli Orange Salad
1 egg
1/4 cup sugar
1 1/2 teaspoons honey
1 teaspoon ground mustard
1/2 teaspoon cornstarch
2 tablespoons water
2 tablespoons cider vinegar
2 tablespoons mayonnaise
2 tablespoons sour cream
4 1/2 teaspoons butter
Salad:
4 cups broccoli florets
1 cup salted cashews
1 cup cubed Swiss cheese
6 bacon strips, cooked and crumbled
1/2 cup raisins
1 can mandarin oranges, well drained
1/2 cup chopped red onion
Combine egg, sugar, honey, mustard and cornstarch until smooth. Gradually whisk in water and vinegar. Cook and stir over medium heat until mixture is thickened and a thermometer reads 160º. Remove from the heat; stir in the mayonnaise, sour cream and butter until blended. Cool.
Mix salad ingredients. Just before serving add dressing and toss to coat. Yield: 8-10 servings
Oreo Biscotti
18 Oreo cookies, divided
1 cup sugar
1/3 cup butter or margarine, melted
3 eggs
2 teaspoons vanilla
3 cups flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
6 ounces white chocolate, melted
Heat oven to 350º. Chop 2 cookies finely; coarsely chop remaining cookies. Mix sugar, butter, eggs and vanilla in large bowl until well blended. Add flour, baking powder and salt; mix well. Stir in coarsely chopped cookies. Divide dough in half. Use floured hands to shape each half into 8 x 3 inch loaf on baking sheet sprayed with cooking spray.
Bake 25 to 30 minutes or until golden brown. Cool 10 minutes. Cut each loaf diagonally into 14 (1/2 inch thick) slices. Stand slices on same baking sheet; bake 10-12 minutes or until lightly toasted. Remove to wire racks; cool completely. Dip l end of each biscotti in melted chocolate. Sprinkle chocolate with finely chopped cookies. Refrigerate until chocolate is firm. Makes 28 servings.
